So before I came to Texas, I had no clue wtf a brisket was, my wife bought me a smoker for fathers day so I had to smoke a brisket. Slow smoke at about 250 for 7-8 hours until temp in meat is about 195
The rub Is a whole bunch of shit in my pantry, chili powder, salt, pepper, sugar, ground mustard powder
After u smoke it wrap it up with foil and towel so the collagen breaks down and makes the meat tender for about two hours, put it in the oven covered for another hour and a half and after cut across the grain, there's other ways of doing it but this is the way I did it today

That sounds like how they usually describe it when they visit places that serve brisket on "Diners, Drive-Ins, and Dives". Not sure about the towel part though. Don't think I've heard of using one.

They're really expensive but I really want a Treager smoker... One of the pre communist built ones of course. One of my friends sells them but even for the smallest one they have its like $400. I've never eaten anything off of one that wasn't amazing though.

Just my luck to stumble onto this post after being away from home and eating day old cheese sandwiches and power bars all day. I have never tried to smoke anything, but I have to check into it after seeing this. Looks delicious.

It came out great it fell right off the bone. I put it in a pan with a soy sauce and orange marmalade sauce with a little bit of apple juice. I sprayed it with a spray bottle of applejuice every hour to keep it moist.

Yeah, I've hit the "big 3", brisket, ribs, and salmon, of the smoking scene. The smoker makes them unmeasurably better than a comparable grill.
I'm trying to find some more "better with smoke" chunks to run with. Probably be some chicken or roast soon.

I really like the idea of Charcoal, but it seems so much more demanding and challenging with trying to keep the temp consistent. Wood pellet and propane sound easier and electric even Simler than that, but then I worry about flavor.

I was just looking at this one earlier and reading reviews on it. Looks like this will be one of the next purchases. Many of the reviews mentioned upgrading the propane line to a needle valve regulator. Have you had any issues with regulating temps ?

I thought about getting a propane smoker so I can set it and forget it. But I think that takes the fun out of smoking meats. Maybe when I deploy so my wife can have her some smoked ribs while I'm gone. Also that's pretty inexpensive for a vertical smoker like that. Sweet deal.

Forgot all about food porn pics, but smoked a turkey yesterday. Six hours in the brine, seasoned with Weber's beer can chicken rub, 10 hours in the fridge, and 7 in the smoke box with a bud light shoved up it's ass.
Think about how much better deep fried turkey is over traditional oven-baked. Thats how much better this was over deep fried. I could have lopped off a chunk of breast and run it through a meat slicer, it was so tender. Tasted amazing.

Didn't take any pictures, but made my modified armadillo eggs. JalapeƱos stuffed with Monterey Jack cheese, wrapped in a mixture of cheddar, ground sausage, bisquick, more Monterey Jack cheese, and a sprinkling of red pepper flakes and garlic salt. Wrap that in applewood bacon and bake it. So good!

24 jalapeno peppers
1 pound ground sausage
2 cups all-purpose baking mix
1 (16 ounce) package Cheddar cheese, shredded
1 tablespoon crushed red pepper flakes
1 tablespoon garlic salt
1 (16 ounce) package Monterey Jack cheese, cubed
1 (8 ounce) package Monterey Jack cheese, cubed
1 package Applewood bacon (raw) (~20 slices)
Cook 12 slices of bacon in the oven for 7 minutes following these directions: http://culinaryarts.about.com/od/breakfastcookery/ht/bacon.htm
Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.
Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp. Melt the 8 oz of Monterey Jack cubed cheese in the microwave.
In a medium bowl, mix sausage, baking mix, Cheddar cheese, melted Monterey jack cheese, crushed red pepper, and garlic salt.
Stuff jalapenos with the 16 oz cubed Monterey Jack cheese. Shape sausage mixture around the jalapenos to form cylinders. Wrap a half piece of partially cooked bacon around the cylinder and secure with a toothpick.
Arrange jalapeno cylinders on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.

The best brisket I ever had was in Huntsville AL. The name of the place was wagon wheel. The food was epic texas bbq. The owner was from texas and knew his stuff.

Ingredients:
Steak/roast
Black Beans
Tostadas
Ro-tel
Mexican Blend Cheese
Cilantro
Sour Cream
We pressure cooked a roast, but you don't have to that. You can cook the steak however you want. I can't recall all of the seasoning we used, but I would guess cumin, chili pepper, salt, pepper, tajin, garlic, etc. Once cooked, cut the steak into small pieces.
Microwave some canned black beans then smash them. It would probably be tastier to cook fresh black beans, but they are still amazing with canned beans. Use similar seasoning to the ones mentioned above.
Spread the smashed beans on the tostadas. Put steak on them and sprinkle cheese and Rotel on top of it.
Place the prepared tostadas on a sheet pan. set the oven to 350 and cook them for 15 minutes or until the cheese is melted and you think they're ready.
Take the tostadas out, and sprinkle some fresh diced cilantro on them. Add sour cream and enjoy!

They look bomb... Gonna have to try them.... Think I will use a crockpot an make fresh beans and throw the meat in with them... Cook them slow for like 6 hrs.... Shit I am getting hungry now, guess I better go grab some grub.....one last thing, how do u do your shells? If I buy tostada shells pre do be they taste different... When I cook them they seem to get real greasy and or to crisp almost hard..... So is there a trick to it, certain temp the oil should be? Certain kind of oil?. Anyhow, thanks for the info Bro.....

You can't go wrong with most of what's out there, especially if you are a beginner, and just cooking for yourself or a few people. Go to Lowe's or home Depot they have some decent and we'll priced ones there, or if you want something a little nicer and pricier, they usually have an excellent selection at this big bass pro shops. The most important thing is to get one that is nice and thick, none of that thin metal, it won't rust out as much and get holes in it, and you want one that has good seals around the openings so it's easy to control the flow of air into the smoker to allow you to best control the heat. I have spent most my life learning how to smoke meat(bring on the jokes) so if you have any questions, hit me up! I smoke a mean Texas Brisket!

I have a Masterbuilt 2 door propane smoker, and it's pretty much awesome for a starter. Made one or two minor fixes, and it's smoking like a champ. I'll probably upgrade it down the road to something bigger and more expensive, but it'll be a while.

Lol, yep. The model I have has 4 vents so it's supposed to be fairly easy to maintain temp. everything I've read says it's definitely trial and error but should be able to "figure it out" in an afternoon. I actually have the Masterbuilt digital electric in my garage because I bought it first, but I thought I'd regret not getting what I wanted in the first place. I hope I don't regret it too.

I'm partially a loser though because after 6 hours of love I was too excited to take an after picture and they were gone by the time I realized it. I can see some people not liking the effort it takes to smoke with these, but the results were spectacular. Ironically I had a hard time keeping the temp as high as I wanted it. I'm keeping a log though and I have a feeling I'll have it mastered quickly.

Keeps it a perfect medium rare throughout the whole steak, extremely juicy, and tastes amazing.

Naw, adjust your time to go beyond medium rare. You're smoking at 225, so just pull it at a higher temp.

So I tried my hand at brisket for the second time. Love the taste but disappointed there was no smoke ring. The pinkness in the photo is from the rub and not the meat. I cooked it at 225 for about 7-8 hours. The first one was rushed(6 hours) and undercooked in my opinion. How long and hot are you guys doing yours?

You have to trim some of that fat off before hand and score it as well. It's a learning curve, and has taken me several times to get right
It's a master built electric with the cold smoker attachment so it smokes constantly. Vent 1/2 open. The briskets I got didn't have much fat but they were on managers special. I need to find a real butcher or meat shop.

I don't like that smoker I have the same one and can never get a good smoke ring or flavor. I use it mainly to smoke salmon
The cold smoker works well for actually making smoke compared to the regular setup. I'm going to try and seal the the lid so less smoke escapes that way.

Yeah, even with fat cap, you should be getting smoke ring on sides. I've never used a cold smoker though.
But for the rest, worry less about cook time and more about internal temp. 190-200, pull and wrap it for an hour or two.

Thanks for the advice guys. The cold smoker attachment just produces smoke the whole time because the electrics don't produce much of it at low temps. They are insulated a little too well so the burner isn't on often or long enough to produce good smoke. I'll have to start trying to cook the stuff well done. Is there a long stall like with a Boston butt? Do you guys usually do it over night?

Yes, there is a stall. You can cook through it, or use the Texas Crutch, where you wrap the meat with some juice and basically braise it through. None of that hard bark, but the meat is more tender and juicy.
I've done an over-nighter a couple times after I got the pellet cooker for early morning games. Good way to wake up.
