Well I love cooking always have taught how to cook and make Greek food as my step dad was a chef and now my wife is teaching me how do Italian food as she is 100% Italian now I need my niche I love BBQ in the grill any ideas for cooking fish on the grill ?

Smoked or grilled
Salmon is amazing with the wooden planks smoked for 2-3 hours depending how big. Grilled: salt and pepper with sliced lemons, olive oil salt and pepper with lemon juice. Fucking amazing the smoked salmon is if you have the time. If your just setting it on the grill just be sure to put oil on it bc it will stick

Ok I will try that I also bought a lil metal thing for chips of wood for flavor enhancement. You think just cedar planks be ok ?

Cedar planks will work fine just make sure you soak the planks 30 min at a minimum or else it will catch fire. I take it you only have a gas grill.

No I use a charcoal as well a good ole

With the weber grill just throw wood chunks in your charcoal on one side and put the food on the other side. Thus cooking with indirect heat while absorbing the smoke flavor. I recommend apple wood for fish and poultry.

Have you tried the cedar wraps as well? It's basically cedar sheets of paper and I love to roll chicken or fish up with vegetables and grill it. Its amazing! Same rules apply, you have to soak the sheets first or risk it going up in flames. When I do fish on the grill I make a sauce using package miso soup. I'll heat up the soup with around 1/4 cup water then after all the flavor is in the broth I strain the other stuff out and add brown sugar and soy sauce then cook it down until its a thick sauce. Amazing.
