Great for Football season. All of you with a crockpot will enjoy this.

1 lb ground beef, cooked and seasoned to taste with chili powder, cayanne pepper & salt
1 chopped yellow onion- add to beef when cooking
1 can chopped tomatos --15 oz
1 can corn- 8 oz
1 can kidney beans, rinsed and drained or any beans you like
1 can green enchilada sauce-- 10 oz
1 can diced green chilis-- 4 oz
4 green onion chopped
2 boxes Jiffy corn bread mix
2 eggs
2/3 cups milk
1/2 cup sharp cheese of your choice
Sour cream

Cook beef and onion and drain, then add to crock pot along with corn, beans, tomatos and enchilada sauce and stir well. Then add chopped green onions on top (save 1/2 to add later), along with a dash of chili powder or spice. Then mix your corn bread and add green chilis and cheese when mixing, just follow the box. Pour into crock pot and cover. Cook on high for roughly two hours or until corn bread is done.
Spoon into a bowl, add sour cream and some green onions on top and Enjoy.
